Eating Raw Food in Real Life….

So far there has been easy days, and some rough days on my “All the way RAW May” adventure. I am feeling good, clear headed, lighter, and brighter. I am experiencing some detox as well. Headaches, especially after I smell fresh coffee being brewed. My sleeping patterns are a little off too (That is really nothing new for me.)

The food is just yummy. The time to prepare it, a little harder to come by. When I can I go to the Café Gratitude its easy, otherwise I am either up late or up early chopping, blending, or food processing away.

My easy go to: Big salads; they rock. I sound like such a boring nutrition nerd when I hear myself say that, but its true. I feel so much pleasure munching on those leafy greens, crunchy fresh cucumber, lively local sunflower sprouts, and homemade creamy garlic-tahini dressing.

Wile on my journey, I am listening to my own advice to my nutrition clients. Slow down, take a few deep breaths before eating, and chew your food. Really chew it. Not only are you getting to appreciate the flavors and textures intimately, you are really grabbing all of the nutrients out of these foods. Getting all of the vitamin C from the crunchy red bell pepper, and absorbing the Zinc from a well-chewed raw pumpkin seed.

Two weeks is always a turning point for me. It’s when my body starts to feel different. My cravings for bad foods disappear. My overall big lesson so far is the big picture of a healthy balanced life. Even if you have the perfect diet, it does no good if you are not exercising. Or perhaps you take a time out and treat yourself for a massage, doesn’t help much if your stress level is so high you can’t relax. My big thing is over-committing to big projects, hence all the way raw in May haha.



This just comes back to creating a healthy balanced life. One of the healthiest things I have done for myself all month is take a true day off from work and my other responsibilities to enjoy a Mothers Day Beach Day, at Sea Bright beach yesterday. It was so lovely. Playing Frisbee with my brother, visiting with everyone, and digging in the sand with my nephews. I still managed to be raw: brought some coleslaw, got down with some watermelon and shared my chocolate macaroons.

Chocolate Macaroons

3 cups dried, unsweetened coconut flakes

1 ½ cups cocoa powder

1 cup maple syrup

1/3 cup coconut butter

1 tablespoon vanilla extract

½ teaspoon sea salt

I’m a Lazy Raw Foodist.

One of the great joys of living in Santa Cruz, is not only the beach, but having a local Café Gratitude. I worked at the Café when I first moved to town. It was then, and is now, one of my favorite places to eat. It has raw and cooked organic vegan food.

Because I was preparing meals for others all of last week, feels great to be a lazy raw foodist the last few days and eat the café. My favorites include “I am Pure” (Spinach salad with fig-balsamic vinaigrette)“I am Peace” (Raw bagel and lox) and “I am Berry-Sweet” (A strawberry smoothie made with almond milk and dates, and I added kale.) I even got myself an “I am elated” to-go for dinner tonight.(Raw spicy enchilada) I am so spoiled. Back on the food budget tomorrow…..

A usual all-raw day for me looks is pretty simple. I start with a morning smoothie or a couple of pieces of fruit. Maybe a handful of nuts, flax crackers or kale chips for a snack. Huge salad for lunch. And some experiment for dinner. If I am not in the mood for raw creative experimenting in the kitchen, I can just go for the simple salad again, but I like to keep it interesting. At least make up a new wild salad dressing. I always add tons of sprouts as well, to get my fair share of life-force and protein.

The hardest part for me this month so far, I find it hard not to celebrate with others when it comes to special events. While everyone is having beer or wine this week, I have grabbed a kombuccha or made up a different fun drink. Maybe poor a little kombuccha in a wine glass with some fresh unpasteurized pomegranate juice, or some mineral water with agave, mint, and orange slices or raspberries. It is not that I need an alcoholic beverage, its just cool it have a fun drink and feel included when everyone else is having a fun beverage.



I was fortunate enough to go to the giants game this last week, and brought my own kombuccha, it was delicious, and about $5 less than the beverage my friend was having haha. SCORE!!!

Raw Food in the most unusual places…..

Day 3 –  All Raw for a month, and it’s going great.  Boy I tell ya, be careful what you wish for. Just the other day I was whining about not having anyone to cook for, and now I have too many people!

When I shared with my co-workers what I was up to, they were pretty intrigued….. You are going all raw, I don’t understand what you eat besides kale?! Make me something! That is how is all started…..

Wait let me back up….. I have a confession. I have been hesitant to tell my raw food community about my “real job” if you will, because it is so far away from the divine healthy lifestyle that most strive for. In fact, my current profession to pay the bills has the WORST reputation… I think… of any profession??!

I am just going to come out and tell you, I sell cars….What? gasp! Who? When? Why? Well, my raw cheff-ing, schooling, and dream following needs to be financially supported at the moment. It was truly divine intervention how I got this job, and on top of that, deciding to take it.

I am happy to report I have been successful so far, not only selling a ton of cars, but also being true to who I am and not giving up on the dream. I have many dreams with the Raw Chef adventure, but the main idea is being of service in the world helping people live healthier lives, and have a ton of fun doing it.

So back to my point…. I have a ton of people to feed now because I am making raw food lunches for my co-workers and bosses. I am SUPER busy, but it is great and I love being a health educator between car deals. I am bringing 5-6 extra meals a day, some breakfast, mostly lunch, and one dinner. I have never had such a big smile on my face until today when I overheard one of my managers say to another, “Vegans and Vegetarians never made sense to me until I ate Stephanie’s food. I have really liked everything I have tried.” That to me is HUGE…. Especially when you have seen the diets of the car industry first hand.

What I ate today:

Breakfast: Smoothie with fresh strawberries from the farmers market, spinach, frozen blackberries, moringa powder, Chocolate Vega protein powder, and a banana.

Snack: Some earl grey tea and Macro Bar

Lunch: Mixed green salad with shredded carrots, beets, cauliflower, sunflower sprouts, avocado and homemade Honey Mustard dressing. Also some Penne Zucchini pasta with pesto sauce made of basil, spinach, pine nuts, hemp seeds, lemon juice, olive oil, and salt. (I should probably be sick of zucchini pasta by now, but it is so simple, easy, and affordable, I just love it)

Snack: Collard wrap leftover from yesterday and a few celery sticks with macadamia nut and pumpkin seed cheese topped with black pepper.

Dinner: The same big salad and I had some onion rings which just finished in the dehydrator (for lunch tomorrow)

All the way May.

“All the way May” is back baby! For those of you that don’t know, I go 100% raw for the month of May every year. In normal life I am honestly about 50% raw and 50% cooked food. I have found that I need some cooked food in my life to keep me grounded, or else I might just fly away. But I like to go all raw for 30 days as a little cleanse before summer time.

So, today is May 1, 2012, and even after 24 hours I am feeling that raw buzz. Which feels great!

So what did I eat today? Smoothie for breakfast: Peach, mint, spinach, moringa powder, Vega protein powder, and almond milk. Big kale salad for lunch, along with a few bites of some manicotti rolls I made for others who are also going raw with me. Dinner: Lovely collard wraps filled with shredded zucchini, carrots, and beets topped with homemade tamari almonds and dipped in my cilantro cashew cheese spread.

I would call that a successful first Day-O-May.

Feel free to stay tuned and follow along. I will be posting recipes and my experience. I also have a little workout routine going. I have been attending CrossFit West Santa Cruz and also just bought a yoga class package so I am ready to put the good stuff in and sweat the bad stuff out.

An interview with Loren Lockman…..

It is my pleasure to share with you an interview with the fabulous Loren Lockman of Tanglewood Wellness Center in Costa Rica. He is coming to California for his speaking tour, and I am going to see him this week in Santa Cruz for sure! Thank you Loren for your contribution! Who wants to come with me?

What do you love most about Raw Food?  An optimal raw diet has allowed me to meet my body’s nutritional needs without hurting me in any way.  As such, I maintain my energy, vitality, mental clarity and fitness at amazing levels easily and effortlessly.

What prompted your journey into Raw Food?  I had been very sick in my early 20′s, and worse with 3 years of medical care.  When I finally realized I would need to find the way myself, I embarked on a journey not just to eliminate my symptoms, but rather to maximize my potential in every way.  I’m quite clear that this is possible only when eating an optimal diet.

In what ways has Raw Food enhanced your life? Aside from the benefits I mentioned above, my optimal raw diet saves me hours each day, as I spend virtually no time preparing food.

What projects are you currently working on?  I have a children’s book being illustrated now, and two serious books that I am working on, as well as designing many improvements for my new Costa Rican center location, some of which are currently being built.

What are some Raw Food Staples in your diet and why?  I live in Costa Rica, and so my staples center around the amazing fruits available there, including mangoes, papayas, bananas, and watermelon.

What are some tips you have for Newbies just starting out?  The most important things a newbie can do are: 1) decide what they are truly committed to, 2) get the body clean and efficient so that it will function as well as possible, 3) learn how to get out of the head and learn to listen their virtually infinitely-intelligent body’s messages, and 4) find a mentor that they can trust rather than taking advice from people with limited success or experience of their own.

Do you take any Supplements? If so why or why not.    I take no supplements for two reasons: 1) like every other species, if we eat correctly and the body is working efficiently, we can easily get what we need from an ideal diet.  If we are not getting what we need from our diet, either the diet is insufficient, or the body is not working properly, and 2) taking supplements creates imbalances in the body and leads the body to become dependent on supplements, less able to get what it needs from whole foods.

Do you have an opinion on whether juicing or green smoothies are better?   Hard to say as both give the body massive quantities of nutrients which the body must then work hard to eliminate, both jack you up with unnatural quantities of either protein or sugar (without fiber), and neither are natural to the body.  I don’t use any machines, and find over and over again that my clients do best when they don’t use them either.

Who inspires you?  Einstein, Da Vinci, Buddha, the Dali Lama, Lao Tsu, Tesla, Twain, Seuss and many other great thinkers, artists, and philosophers.

What is one thing most people do not know about you?  I walked away from a lucrative commercial real estate career to help people heal and have worked 15 years without a salary.

An interview with Melissa Mango…

It is my pleasure to share with you an interview with my friend and personal Hero, Melissa Mango. Melissa is so full of wisdom and grace, it is a blessing just to know her. I assisted her Raw Foods class last month and was impressed with her style and creativity. I will be assisting her Raw Foods Class again February 18th, from 10:30am-12 noon. What do you love the most about raw foods? I love what it does to restore and regenerate the body. This is why it is “The Norm” for people who eat this way to look younger and more vibrant.  This is a result of not eating processed foods and instead choosing Live Raw Foods.

What started your journey with raw foods? I began my interest and understanding of Raw Foods through my personal trainer and friend Kane Laskey back in 2001. Kane enthusiastically shared with me how amazing Raw Foods had been from him and his training in preparation for kickin’ butt in street bike racing. He was always looking for the competitive edge in life and in training, excelling far above the average racer in this context.  It was unmistakable the transformation that had taken place in both his physical body and his mental state since adopting a diet of primarily Raw Live foods. Live foods really do promote and enhance life. With Kane as my training, I began eating primarily raw-live foods in preparation for a burlesque competition and I found the more live foods I ate, the more energy I had and the better my body, complexion and even mental state became. My body transformed rather quickly especially since I was training so hard. All my friend were curious what I was doing different. I got the glow, felt sexy and on fire-  I was hooked!

How has raw foods changed your life? In every way. Aside from the obvious weight loss and natural toning of my body that was direct results of eating live foods, my whole state of mind began to shift towards a more consistently positive state with lead me to no longer wanting to numb out on tv and instead get outside more. The longer I ate more fresh live raw food combined with no longer eating refined and processed foods, drugs and hard alcohol my whole spirit, physical body and the way I saw myself contributing in the world changed. I no longer saw or felt myself as separate. I remember having this intense desire to quit my job as a high paying bartender and successful dancer to live in a hippie community rich with gardens, earth domes and creativity. It was the sense of truly being with nature and others cooperatively that I craved. It was as if the tv, processed and numbing foods dampened my true essence and live foods unlocked it all. Results like this ARE typical.

What projects are you working on? Currently I am working for Café Gratitude, as well as independently catering raw food and nourishing cooked cuisine to private high-end retreats, various yoga retreats and transformation weekends.  Locally I am an instructor for New Leaf Market in Santa Cruz where I teach easy a variety of Raw Food Cuisine.  I specialize in practical techniques that anyone can do at affordable community supporting prices. On the side I am completing my Certification as a Clinical Hypnotherapist and Mind-Body Life style Coach which is truly my life’s work. This is where my life really gets juicy.

Where do you see your journey going? My journey has been amazing and will continue to unfold the more tools I learn as a Mind Body Wellness Practitioner skilled in Hypnotherapy.  I see myself building my skills as a Transpersonal Hypnotherapist offering clients deep and profound healing by way of the unconscious mind. Did you know 80% of our Life’s decisions about how things “are” come from our unconscious mind. Think about that! We generally operate in the world from our unconscious mind which quite often, out of an attempt to protect us; harbors trauma, fear, feelings of unworthiness and so on- hidden deep inside. It is vital for people to understand that where there are blocks and resistance in our lives keeping us from whatever outcome or desire we want weather it is in business, relationship, health and more- there is also a desire for wholeness and healing. These blockages can easily be dissolved and healed through the hypnosis I do with clients. Now that is transformation everyone deserves. Freedom!

What are some raw food staples in your current diet? My staples change depending on the season. For instance I am diggin’ apples and dates in my breakfast routine which really assist the body in getting rid of free radicals in our cells. I know that the warmer it gets I will begin to crave watery fruits such as melons, citrus and mangos of course! As far as consistent staples, I enjoy a variety of fresh leafy greens, wild dandy lion and other wild greens. Reishi and chaga mushroom tea I also enjoy!

Online Dating: What’s love got to do with it? By Laura Guy

Most of you that follow my blog know by now, it is about much more than food. I like to talk about leadership, being love courageously expressed in the world, inspiring stories, the RAW human experience if you will. I believe that we are all connected to all. Meaning having a healthy life is about so much more than food.

Today, we have a guest blogger that is sharing a story about love. Not so much romantic love, but unconditional love for oneself, especially when romantic love goes south. Thank you for sharing with us Laura Guy, I appreciate your transparency, self awareness, and acknowledging the dark side to all of this unconditional love stuff.

Online Dating: What’s Love Got to Do With It?

If you really knew me, you would know that I am failing to be love.  The days and weeks I’ve spent over the past couple of years on transformational work and personal growth are not revealing themselves to me or the Universe.  At least not right now.  My commitment to unconditional love — to loving even the unlovable —  is being tested big time and I’m losing.  God, I hate it when I lose.

I was excited to go on a date, a blind date, with Scott, a manager at a medical device company who was new to the area.  We had met online earlier that week and had been chatting and txting for several days. We agreed to meet on Saturday night at 9:00 pm at O3 Bistro and Lounge in San Francisco.  A bit pooped from having worked most of the day, I pulled myself together, fixed my hair, painted my nails and prepared to be charming.

Only to be stood up.

Yeah, I know.  Who does something as lame as agree to meet a blind date and then not show up?  Doesn’t everyone know that the Golden Rule actually doubles when online dating?  Apparently my date and I play by different rules.

Or maybe not.

You see, as embarrassed as I am to admit, the morning after Scott’s no-show I still had not received a reply to my voicemail or txt.  So I decided to take swift action: I sent him a pretty nasty txt message; I reported him as a scammer on the site (I lied and said he was trying to sell me on Scientology); I blocked him from contacting me on the site; and I blocked from contacting me by phone (gotta love Google Voice.)

So much for the Golden Rule.  I certainly wouldn’t want anyone to take such mean-spirited action towards me and here I was killing Scott off with all of the tools in my arsenal.

Before doing all of this, I called my sister.  I shared my upset and disappointment with her and told her about the mean txt message I drafted in my fitful sleep.  In a totally well-meaning and loving way she launched into the Laura-you’re-a-much-better-person-than-that coaching, which really annoyed me.  I know where she was coming from, trying to save me the emotional spinning of getting back at this person but I didn’t really appreciate it.  I wanted to share how I really felt with her without being judged or told what to do. I wanted to share what I was really feeling since hiding or stuffing it does not make it go away.

Did my actions make me feel better?  Admittedly, yes, even if in a really small, vindictive way.  I know, that doesn’t really fit with my whole *unconditional love* commitment, does it?  But the truth is that sometimes I’m not a better person than that.  Sometimes I am mean and petty and rude.  And despite all of the work I’ve done and continue to do on myself, I may always be somewhat mean, petty and rude.

And there you have it — my big lesson.  In trying to accept myself the way I am, I also need to accept myself the way I am NOT.  Yep, as much as I’d like to be, I am not always loving.  As much as I’d love to be, I am not always perfect and do not always take the coaching.  As much as I have love to be another way, I am accepting and loving myself the way I am.  The “old” me would have considered my behavior a sign that I’m fundamentally a bad person — that the exploration of unconditional love isn’t for me, that it’s for nicer or more evolved people, that I would never succeed on this spiritual path.

But rather than beat myself up for not being a more evolved human being, for not turning the other cheek, I am learning to love myself even when I fail in being love. Sometimes I do have the ability to witness my thoughts and emotions without taking defensive action.  And sometimes I do make the choice to strike back in an effort to protect myself.

I am accepting myself.  I am perfect, whole and complete.  I guess I could give this guy that benefit as well.

But I’m not up to it today.  Get back to me next week!

Super Bowl Mango Salsa

There is a myth out there about people who eat healthy and take care of their bodies, it is that they don’t know how to have a good time…… this is simply not true.

There  are ways to have fun, eat nutritious foods, party like the best of them, and not destroy your body.

Even though my beloved San Francisco 49ers are not in the super bowl tomorrow, I am still going to watch the event, laugh at the commercials, and eat some nutritious goodness.

Try on this Mango Salsa recipe this Super Bowl Sunday and get some Vitamin A, C and B6. Mangos are also a great source of dietary fiber.

Mango Salsa

2 ripe large mangos
1/2 red onion
1 cucumber
Cilantro to taste
1-2 limes to taste
1 jalapeño chilie
Salt

Chop all ingredients, add lime juice from lime and salt…bamm!
I bet it would be tasty with some jicama in there as well!

An interview with Eric-James BeLove Horton-Brande….

It is my pleasure to introduce you to my dear friend and fellow Leader in the Awakening of Love, Eric-James. Eric-James is a man of integrity, very unique, lovely to be around, and just straight-up talented in the kitchen. I personally dig the name of his Health Coaching company and a little bummed I did not think of it first, Conscious Nosh. Check him out….

What do you love the most about raw foods?

I love how fresh and alive raw foods are. And forgiving with preparation!

What started your journey with raw foods?

I was eating a standard American teenager diet consisting of candy, cheap beer, ice cream, chips and turkey sandwiches. I developed something called intussusception, where my colon telescoped inside of itself causing severe pain for years until it was fixed with major surgery and 2 weeks in the hospital. Although western doctors failed to give me a reason why this happened at 19 years old, I knew it was from the way I was living. I met a guy who was eating only raw foods and intuitively knew that I needed to give that a try. I went to Safeway and bought lemons, carrots, almonds and water and started to eat only raw foods. 2 months later I found Cafe Gratitude and began my journey down the abounding river. I suffered from whole body hives for more than 6 months, every night as a detox symptom. A annoying as that was, eating raw foods taught me to learn about wellness as a whole, veganism, my spirituality, organic farming, and conscious community.

What projects are you working on?

I’m teaching some simple cooking classes in Berkeley and San Francisco. I am selling a Men’s Calendar that I created as a project to generate scholarships for men to become Health Counselors. Male enrollment is about 5% at the school I went to and I want to invite more men to do this work. www.menofiin.com . (I’m Mr. October, by the way).  I work with individuals who are wanting health counseling for specific health goals like stress management, weight loss, food addictions. My wife and I are currently looking for property to buy and create a Healing and Wellness Education center where we will live with other practitioners and hold workshops, retreats, grow Organic food and raise our children.

What are some of your favorite gadgets to use in the kitchen?

I have this AWESOME veggie peeler with a julienne blade! It’s perfect for grating raw veggies for salads, wraps, grain bowls, for 1-4 people. I think every kitchen could use this handy device. Also essential is a good sharp chefs knife.

What are some quick tips or hints for raw newbies?

Don’t suppress your cravings for cooked food if you are going “all raw.” If that’s the goal, work up to it and give yourself a break. It’s a process, not a race, and perfection doesn’t mean anything if you’re stressed out, hungry, or having intense cravings. Learn to tune into your bodies nutritional needs. Is this a sugar craving because I’m dehydrated, I need protein, I want to be comforted, or I have an addiction? Get with friends to enjoy raw foods!

Can you share a favorite raw food recipe with us?

Toss shredded carrots with diced jalapeno pepper, orange juice, lemon juice, gomasio and salt to taste. Serve on a bed of arugula dressed with olive oil, lemon juice and salt.

New Year, New You. Visions for 2012.

Even if you don’t believe in New Years resolutions, I bet you can’t help but feel some kind of fresh start from the idea of the New Year. I have talked to some quite inspiring people lately about what their intentions are for 2012. Some people want to get in the best shape of their life, do things they have never done before, eat better, travel, make lots of money, get a job, not work, etc.

I love a new year because it feels like a new beginning. Last year I did a “Commitment to Non-Consumption,” which was a life changing experience for me. To stay in integrity, I made it until October, going strong for 10 months! Then it just became too difficult with some basic needs. But overall one of the most rewarding experiences of my life. I really think about my purchases with a whole new awareness now. A lot of “Do I REALLY need this?” questions for myself. Which has been great for self-awareness, not over consuming, and keeping my “stuff” as simple as possible.

This year for New Years Eve, I went out and bought myself a simple lace black dress that I could wear to work, an event, or just a nice dinner. I felt special having something new and did some serious dance moves and twirling in that dress. I also bought my dog a color and name tag from Etsy.com. The only things I really like to spend my money on now is high quality organic food, hand made art, education, and travel to see friends, family and loved ones. Besides that, I truly have everything I need and have appreciation for the little things in life like that now more than ever.

I am committed to a few things this year I would like to share with you.  A few are getting in amazing shape, eating better than I have ever eaten, and starting to write my book, “The 6 week vegan workout plan.” I am also giving up coffee for the first 3 months. As well as I eat, I feel as though my reliance on coffee has me feeling unbalanced, no matter how well I am eating and taking excellent care of myself. This may not be that fun of an experiment, but I am really at the point in my life where I like experimenting with different diets and finding what works for me.

I want to be clear that I love coffee and I don’t think anything negative about it. I, in fact, love it too much. It has been 12 days without coffee now, and I actually feel great. I am sleeping very well and have an overall feeling of “peace,” the last few weeks.
