We have a completely raw vegan meal prepared for this evenings festivities. Who says you can’t have an All-American meal that is actually good for you? Not me! How does homemade veggie burgers and onion rings sound? Maybe American flag cheesecake? Check it out……

All-American Banana-Lemon Cheesecake, Yes Raw and Vegan

I am sure you have all seen this design on the cheesecake in Women’s World magazine before, but I am not sure anyone has made it Vegan before, let alone raw. I almost went back to the store and got strawberries for the red stripes, but I had some free cherries appear so thought those would work. It turned out dangerously yummy.



This recipe is my own default creation inspired by the combination of Café Gratitude’s Lemon cashew cheesecake, and the banana slice trick I learned at Living Light.

All-American Banana-Lemon Cheesecake

Crust:

2 cups Almonds

1 cup Shredded Coconut

½ cup of chopped Dates

¼ tsp of Vanilla

2 pinches of Salt

Blend shredded coconut in food processor by itself for 1 minute. And in Almonds, Vanilla, and salt. Pulse in chopped dates last. Dump whole mixture in the bottom of a Pyrex dish.

Slice Bananas long ways, about 3 pieces per banana, and place on crust for first layer.

Filling:

3 cups soaked Cashews

1 ¼ cups of fresh squeezed Lemon juice (add less if you want less tart)

1 ¼ cups of Coconut water

¾ cups of Agave

1 tsp Vanilla

2 pinches of Salt

Blend all ingredients in Vita-mix blender.

Add in:

3 Tbsp of lecithin

¾ cup Raw Unscented Coconut Butter

Blend briefly and pour mixture over bananas in Pyrex dish. Place dish in fridge for 3 minute to let harden a bit. Take out to place another decorative layer of fruit if desired. Allow to set in fridge for 2 hours and enjoy!

The U.S. Department of Agriculture Human Nutrition Centers has found that blueberries rank No. 1 in antioxidant benefits, compared to 40 other fresh fruits and vegetables.

Antioxidants help neutralize harmful “free radicals” that can lead to cancer and other age-related diseases. The total antioxidant capacity of blueberries are twice that of spinach and three times that of oranges.

Don’t forget to eat them raw! They are natures candy, YUM!
